The Ultimate Party Snack: Flavorful Mexican Quesadillas

On the weekends, I love making something delicious that’s quick to serve. These Mexican quesadillas are one of my favorites, especially for lunch or as a savory snack at a gathering. This vegetarian version is delicious and super simple, but when I feel like cooking something more elaborate, I also love making them with pulled pork. What I love about Mexican quesadillas is that you can endlessly experiment with different fillings. Have some leftover veggies or meat in the fridge? Just add them in, and you’ve got a brand-new flavor combination. Want to try something more indulgent? Make a quesadilla with juicy, slow-cooked meat or add extra cheese for the ultimate gooey bite.

Ingredients
  

  • 125 g crème fraiche light
  • 15 g picadillo spicemix
  • 100 g mildly spicy shredded cheese
  • 8 small tortilla wraps gordita

Mexicaanse groentemix

  • 75 g white pointed cabbage
  • ½ red bell pepper
  • 25 g corn
  • 1 green onion
  • ½ red onion
  • 4 el olive oil

Here’s how to make these delicious, flavor-packed Mexican quesadillas:

  • Gather all the ingredients

Preparing quesadillas

  • In a bowl, mix 125 g crème fraiche light with 15 g picadillo. Stir well until the crème fraîche turns completely red.

  • Chop the ½ red bell pepper into small pieces.

  • Slice 1 green onion into small rings, about ½ cm thick.

  • Finely chop the 75 g white pointed cabbage.

  • Add 100 g mildly spicy shredded cheese, 75 g white pointed cabbage, ½ red bell pepper, 25 g corn, 1 green onion and ½ red onion to the bowl. Mix everything until you get a sticky vegetable mixture.

  • Lay out 4 small tortilla wraps and divide the vegetable mixture evenly over them. Spread the mixture so that the entire wrap is covered.

  • Place the remaining small tortilla wraps on top of the filled ones. This creates the quesadilla.

Cooking the quesadillas

  • Heat 1 tablespoon of olive oil in the pan per quesadilla.

  • Place the quesadilla in the pan and cook for 5 minutes.
  • Using two spatulas, flip the quesadilla and cook for another 5 minutes.
  • Remove the quesadilla from the pan and repeat the steps for each quesadilla. Tip: Warm a plate in the oven at 65°C and place the cooked quesadillas on it to keep them warm until the last one is ready.
  • Cut the quesadilla into four pieces and serve on a snack board or platter. Enjoy!

Did you taste it?

  • Love cheese? Add a small dollop of extra crème fraîche after flipping the quesadilla in the pan and sprinkle some extra shredded cheese on top.
