This dish is a delightful blend of the familiar loaded fries concept and a traditional stewed beef recipe. Ingredients
  

  • 750 grams Lean beef brisket slices
  • 1 liter beef stock
  • 700 grams fries
  • 200 grams ham cubes
  • 32 mini cocktail sausages
  • 40 grams butter preferably unsalted or cream butter
  • 2 onions
  • 2 cloves garlic
  • 70 grams Tomato paste

Saus

  • 3 tablespoons mayonaise
  • 1 tablespoon light crème fraîche
  • 1 tablespoon curry powder

Preparation

  • Gather the ingredients.
  • Chop the 2 cloves garlic finely.

  • Chop 2 onions finely. Wipe your tears and move on to the next step.

Cooking

  • Melt the 40 grams butter until it turns brown.

  • Sear the 750 grams Lean beef brisket slices over high heat briefly, so both sides are browned. About 30 seconds per side is enough. Remove the slices from the pan.

  • Lower the heat and sauté the onions together with the garlic until the onions are translucent.

  • Add the 70 grams Tomato paste and stir well.

  • Add the beef slices and coat them with the tomato paste mixture.
  • Dissolve 2 bouillon cubes in 1 liter of boiling water. Add the 1 liter beef stock to the pan.

  • Bring to a boil and let it simmer for 4.5 hours.
  • About 15 minutes before the meat is ready, heat up the deep fryer. Once it reaches the correct temperature, fry the 700 grams fries for the time indicated on the package—6 minutes in my case.

  • Heat a skillet over medium-high heat. Add the 32 mini cocktail sausages and 200 grams ham cubes, and cook for about 5 minutes.

  • Remove the meat from the pan and shred it with two forks. The meat will fall apart very easily.

Sauce preparation

  • In a small bowl, mix 3 tablespoons mayonaise, 1 tablespoon light crème fraîche and 1 tablespoon curry powder.

Plating

  • Spoon about 175 grams of fries per person into a deep plate.
  • Top the fries with a layer of stewed beef, about 175 grams per plate.
  • Spoon a portion of the ham cubes and mini sausages on top.
  • The top layer is about 50 grams of grated cheese per person.
  • Add the sauce to the plate to taste.

Did you taste it?

  • If you want more flavor, you can sprinkle salt over the fries.
  • Not a fan of curry? Add half a tablespoon of curry powder and, for color, half a tablespoon of turmeric.
