Everyone knows the pasta bolognese, the classic tomato sauce, but what if you fancy pasta, tomato and a little spice? Then this is the recipe for you! A delicious creamy tomato sauce with the pit and aroma of Spanish chorizo with pasta.

Ingredients
Gather all ingredients. Not in the picture are: oregano, tomato paste and the optional red pepper.
On the cutting board
Cut the bottom of the 2 cloves Garlic and remove the skin. Crush the garlic cloves with the side of a knife, cut into thin slices and finely chop the garlic.

Finely chop the red onions.

Cut the zucchini into slices, halve them and cut into 8 cubes per slice.
300 gram Zucchini
Cut the bell pepper into cubes about 2 centimeters in size.

Remove the skin from the outside of the chorizo. Cut the chorizo into slices, halve them and cut into 6 cubes per slice.
450 gram mild beef chorizo
(optional) Cut the red pepper in half, remove the seeds and the seeds. Finely chop the red pepper.

Frying pan /skillet
Add 1 tablespoon of olive oil and the garlic in a skillet. Heat the pan to medium heat until the garlic starts to smell nice.

Add the red onion and fry the onions until the onions become translucent. Add the garlic and onion mixture to the saucepan.

Add the tomato frito and tomato puree to the saucepan and stir well. Lower the heat, make sure the temperature in the pan is not too high because the tomato puree burns quickly while you fry the rest of the vegetables.
Cook the pasta according to the instructions on the package. The pasta that goes best with this dish is Penne or Pipe Rigate so that the chorizo can crawl into the pasta for the most delicious taste experience.

Fry the chorizo in a little bit of olive oil, the chorizo itself is already quite fat so the oil is only needed so that the meat does not immediately stick to the pan. Add the chorizo into the saucepan and stir well.
450 gram mild beef chorizo
Fry the zucchini in ½ tablespoon of olive oil, sprinkle the zucchini with a pinch of salt and pepper. Stir frequently and stop cooking when the zucchini turns light golden brown. Place the zucchini in the saucepan and stir well.
300 gram Zucchini
Bake the bell pepper in ½ tablespoon of olive oil, the bell pepper is ready when the skin starts to wrinkle a bit and slightly discoloured. Place the peppers in the saucepan and stir well. You are now done with the frying pan, so it can be rinsed and put in the dishwasher.

Now that everything is fried and in the saucepan, it's time to season the sauce. Add 1 tbsp smoked paprika (regular mild paprika is also good, but once you've tasted the smoked paprika you won't want anything else), ½ tbsp oregano, 1 tsp chilli powder, ¾ tsp salt and ¾ tsp pepper. Stir well and heat the sauce until it just starts to boil. Add the water in about half a tea cup until the sauce is well mixed with the water, adding all the water. Let it cook for about 2-5 minutes.

Did you taste it?
Add more salt/pepper or water to taste if necessary. The longer the sauce sits, the spicier it gets, so wait a while before adding extra chilli powder until the sauce has set.
